- Place corned beef in large pot or Dutch oven and cover with water. Add the spice packet that came with the corned beef. Cover pot and bring to a boil, then reduce to a simmer. Simmer approximately 50 minutes per pound or until tender.
- Add whole potatoes and carrots, and cook until the vegetables are almost tender. Add cabbage and cook for 15 more minutes. Remove meat and let rest 15 minutes.
- Place vegetables in a bowl and cover. Add as much broth (cooking liquid reserved in the Dutch oven or large pot) as you want. Slice meat across the grain.

- Place brisket, contents of seasoning packet, brown sugar and bay leaves in a large Dutch oven or stockpot; cover with water. Bring to a boil. Reduce heat; simmer, covered, 2 hours., Add potatoes and carrots; return to a boil. Reduce heat; simmer, covered, just until beef and vegetables are tender, 30-40 minutes. (If pot is full, remove potatoes and carrots before adding cabbage; reheat before serving.), Add cabbage to pot; return to a boil. Reduce heat; simmer, covered, until cabbage is tender, about 15 minutes. Remove vegetables and corned beef; keep warm., For horseradish sauce, strain and reserve 1-1/2 cups cooking juices; skim fat from reserved juices. Discard remaining juices. In a small saucepan, melt butter over medium heat; stir in flour until smooth. Gradually whisk in 1 cup reserved juices. Stir in sugar, vinegar and horseradish; bring to a boil, stirring constantly. Cook and stir until thickened. If desired, thin with additional juices and season to taste with additional sugar, vinegar or horseradish. , Cut beef across the grain into slices. Serve with vegetables and sauce.

1. Place the beef in a large saucepan. Add 2 tablespoons of the vinegar and enough water to just cover the beef. Bring to the boil, then reduce the heat to a gentle simmer. Cover and cook over low heat for 1½ hours. Remove the beef from the cooking liquid, draining well, then transfer to a warmed plate and cover with foil to keep warm.
2. Meanwhile, heat the olive oil in a large frying pan over medium heat. Add the onion and sauté for 12–15 minutes, or until the onion is softened and browned. Add the remaining vinegar. Bring to a simmer, then cook for 5 minutes, or until the onion has caramelised. Add the mustard, honey, stock and cabbage and stir well. Cover and cook, stirring occasionally, for 5 minutes, or until the cabbage is tender. Season to taste with sea salt and freshly ground black pepper. Keep warm.
3. Meanwhile, cook the potato in a large saucepan of salted boiling water for 15 minutes, or until tender. Drain well, then return to the pan with the butter and milk and mash until smooth. Keep warm.
4. For the next day, reserve 300 g (10½ oz) of the corned beef, 200 g (7 oz/1 cup) of the cabbage mixture and 230 g (8 oz/1 cup) of the mashed potato for the bubble and squeak fritters. (The ingredients can be refrigerated in airtight containers for up to 2 days, but are not suitable for freezing.)
5. Thinly slice the remaining corned beef and arrange on serving plates with the remaining braised cabbage and mashed potato. Sprinkle with parsley and serve with tomato chutney.
